Holiday Latkas!

I made my first attempt at Latkas on Shabbat this past Friday night. I have to say overall it turned out really well... and I could really eat them anytime! Who doesn't love fried potatoes? My advice though... definitely squeeze the liquid out of the potato mixture with a sieve and again when you are forming the cakes (there is a ton of liquid). Also the cakes should not be thick. Mine were a titch too thick and although still delicious it probably would have been even better if they were thinner!

Recipe:
Four very large potatoes (and this really only makes enough for four adults)
one medium onion
three eggs
one T flour (or rice flour if you want)
lots of salt and pepper

grate the potato and the onion (if you own a food processor use that it makes it so much easier). Mix the eggs and flour with salt and pepper then pour over potatoes. Mix well. Make into cakes and fry in oil.
Serve with applesauce or sour cream.
